This homemade guacamole has more of an autumnal twist to it, making it ideal for celebrating National Guacamole Day today. Created by Brandon Matzek at the food blog Kitchen Konfidence, the recipe for Roasted Fennel and Apple Guacamole adds some fall flavor to the beloved avocado-based dip. While it certainly strays from the classic, the sweeter and fruitier version is anise-like.

Adapted from Rick Bayless, the homemade guacamole contains ingredients such as avocados, cilantro, a fennel bulb, freshly squeezed lime juice, a Granny Smith apple, jalapeno, kosher salt and olive oil. This dish makes a scrumptious snack as we transition between seasons, saying goodbye to summer and hello to autumn, apples and new snack choices.
