These nut snacks came to be as the result of a "snaccident." Philosopher Foods founder Tim Richards told New Hope Network, “We just moved into a new facility, and I didn’t know you had to ventilate it. “As the almonds were sprouting and dehydrating overnight, the room got too hot. When I came in the next day, it was 90 degrees, and the almonds were bubbling." What seemed like a ruined batch of nuts was spontaneously fermented.
Philosopher Foods now produces Gut Nuts with anaerobic fermentation, which is said to yield a savory flavor and functional benefits.
