These Greek yogurt pancakes are a delicious grown up version of the filling breakfast dish and a less intense version of protein pancakes. With plenty of potential customization options, this recipe is an easy-to-follow guide to kick-starting your morning with some extra protein and probiotics.
In order to procure a batch of nutritious Greek yogurt, you will need a small container of non-fat Greek yogurt (in any flavor you would like), a small amount of baking soda, half a cup of flour, one large egg (or two egg whites) and have a cup of blueberries.
Due to the consistency of the yogurt, the pancakes will be thicker than usual. The batch makes five four-inch pancakes.
