Pomegranate-Glazed Salmon Filets

CAVA is Adding Glazed Salmon as Its First Seafood Offering

CAVA is deepening its Mediterranean roots by introducing a new Glazed Salmon protein option.

The first official seafood offering from the brand, the new Glazed Salmon option offers a delicious take on a classic Mediterranean dish. The new protein consists of a tender salmon fillet marinated in a house-made pomegranate glaze and then roasted until flaky and caramelized. The glaze is made with pomegranate molasses, which is a staple of Levantine cooking and gives the seafood that distinct Mediterranean flavor. As Ted Xenohristos, Co-founder and Chief Concept Officer at CAVA, explains, "Bringing salmon to our menu isn’t about just adding another protein, it’s about expanding how people experience Mediterranean food at scale. We took the time to get this right, from sourcing to preparation, so it delivers on both flavor and quality in a way that feels true to who we are.”

Seafood Fast-casual Expansion
Opening seafood-forward options within fast-casual chains creates potential for redefining menu portfolios and supply relationships around perishable, higher-margin proteins.
Mediterranean Flavor Mainstreaming
The elevation of Levantine ingredients like pomegranate molasses signals growing consumer appetite for region-specific condiments and flavor narratives beyond generic ‘Mediterranean’ labels.
Ingredient-driven Premiumization
Highlighting house-made glazes and sourced salmon positions single-ingredient storytelling as a lever to justify premium pricing and differentiated value perceptions.

Who This Affects Most

Quick-service Restaurants

Seafood Supply Chain
Demand from mainstream fast-casual brands for consistent, traceable salmon volumes creates room for innovative sourcing models, logistics solutions, and sustainability verification services.
Food Processing and Culinary Tech
Advances in glazing, roasting, and portion-stabilization technologies could enable scalable, shelf-stable preparations that preserve artisanal flavors at high throughput.
