The Forgotten Feast is truly a holistic eating experience. As pop-up based, it creates an ephemeral opportunity to experience seasonal food that would otherwise be wasted. "Simply put The Forgotten Feast is a roaming restaurant that supports the ugly, the unwanted and the unloved," Tom's Feast website writes on the project. "It creates an unforgettable celebration of taste that centres itself on the use of wild and seasonal foods, wasted foods and foods that have been forgotten or ignored by the modern world."
Tom Hunt is also the author of a fabulous book called The Natural Cook: Eating the Seasons from Root to Fruit, a publication that offers colorful recipes on what to buy and cook seasonally without waste.
