You can use any kind of eggplant you wish for this spread, but this version contains fairy tale eggplant, which has a mild flavor. A garlic and shallots mixture was also used, but you can easily substitute in onions instead. You will also need chick peas, tahini, lemon, olive oil, salt and pepper if you want to recreate this dish at home. The parsley is mixed right into the appetizer, plus more is added as garnish once everything is blended together.
