The dip is a quick appetizer to make that can be put together entirely in a blender. The recipe calls for a large roasted eggplant, garlic with the skin on, walnuts, lemon, maple syrup, harissa paste and smoked paprika. Everything is pulsed in a blender till creamy and served along with chopped walnuts and mint. You can dip either chips, pita or veggies into this healthy dip as a wholesome snack alternative.
