Heist, founded by Stephen and Sarah Bruner, launched an online lineup last month devoted to decaf and low-caf coffees, featuring beans chosen for cup quality before they are decaffeinated. The range is built around water-process decaffeination from multiple suppliers, a detail Heist says preserves flavor while removing caffeine.
Jarrett Johnson of Lineage Coffee Roasting sources the green coffees and develops roast profiles for the Heist offerings, and production runs on Diedrich and Joper roasters at Lineage's facility. One of the early releases, a Pink Bourbon from Huila, earned a 93 score from Coffee Review, and Heist expects another drop later this year.
Heist is pitching these coffees to high-end bars and restaurants that serve guests later in the evening, aiming to make decaf a deliberate menu choice rather than an afterthought. The approach could give chefs and beverage directors a higher-quality decaf option for evening service.
