Healthy lifestyle brand Seek partners up with leading chefs to develop a healthy snack product that is made with cricket flour. The insect-based ingredient is considered to be the next generation of protein as crickets deliver three times more of the essential dietary component than beef and release virtually no greenhouse gases.
Although insects are "already the traditional diet for 80% of the world's nations," Seek taps into chef Flannery Klette-Kolton -- co-owner of Big Little NYC and winner of Chopped, to develop a recipe with cricket flour that would make it more suitable for the American palate. By focusing on taste first, Seek is able to smoothly introduce cricket flour to a new market, all the while boasting nutritious cinnamon almond crunch granolas and snack bites with Coconut Cashew, Banana PB + J and Honey + Seeds flavoring.
