This seasonal cornbread recipe makes an excellent addition to brunch or lazy weekend mornings. From Izy Hossack at the blog Topped With Cinnamon, the pumpkin yogurt cornbread is a seasonal dish you can enjoy for the whole fall season. It involves adding in some mashed roasted squash to a more traditional cornbread recipe.
It pairs very well with raspberry jam, or, if you prefer more of a savory taste, you can go with scrambled or poached eggs with spinach and hollandaise sauce or even a tomato-based salsa. If you do not have any cooked pumpkin or squash on hand, you could also add extra plain yogurt to the mix. Other ingredients include cashew butter, honey or sugar, cornmeal, baking powder, flour, egg and water.
