Kavalan Debuts New Triple Sherry Cask Whiskey

Taiwanese whiskey maker Kavalan has announced the launch of a new expression called Triple Sherry Casks. As the name suggests, this unique whiskey has been aged in three separate Sherry casks, combining oloroso, Pedro Ximénez (PX), and Moscatel-aged barrels.

Once the whiskey has matured in all three barrels, it is then transferred to "marrying vats," where it is laid to rest, allowing the unique flavors derived from each cask to blend together. The result of this highly complex, three-stage process is a one-of-a-kind liquid that conjures flavors of cinnamon, candied smoked plum, and citrus. On the nose, the whiskey is said to taste of berry, tropical fruits, and longan, while the palate features notes of honey, toffee, and chocolate.

"This is the first time we’ve combined our whisky in three different Sherry casks. It’s all about multiplying and enriching the Sherry flavors to make a distinct whisky that has dried fruits, rich caramel, sweet maltose, and tropical fruits as its profile," said the CEO of Kavalan, YT Lee.
