The boozy marshmallows are made from infusing the gelatine with a champagne or drink equivalent of choice and adding processed frozen raspberries, honey, sugar and water to turn the gelatine into a sponge-like consistency. The added champagne gives the marshmallows an added lightness and airy texture while the raspberries turn the batter pink. The marshmallows can be formed into hearts using cookie cutter. Gold leaf can also be added as a garnish for added opulence.
