These healthy fall cookies are made using a peanut butter pumpkin spread and wholesome ingredients that are reduced in sugar, fat and calories. These are ideal biscuits to make for parties or trick-or-treaters to enjoy on Hallow's Eve.

These cookies are infused with a tantalizing pumpkin flavor thanks to a pumpkin spiced peanut butter spread that offers a creamy, nutty and robust flavor to these cookies. Added to the spread is pumpkin puree, maple syrup instead of sugar, oat flour, vanilla and spices. The dough is rolled and then punched out with Halloween cookie cutter shapes such as ghosts, witches or pumpkins. The cookies can be enjoyed as-is or topped with a vanilla sugar icing and eyes made from raisins.
