These Festive Flapjacks are Flavored Like a Classic Cookie

Even though Christmas Day has come and gone, these gingerbread pancakes make a hearty morning meal for what remains of the holiday season. From Izy Hossack at the blog Top With Cinnamon, the delicious breakfast recipe turns a beloved Christmas cookie into festive-flavored flapjacks. For an added treat, they are topped with salted treacle butter instead of your typical maple syrup (although that would also be very yummy).

The gingerbread pancakes are an altered version from Samantha Seneviratne. You will need seasonally appropriate ingredients such as ground cinnamon and clove plus unsulphured molasses and finely grated fresh ginger. You could opt for toasted pecans, cream cheese, salted caramel sauce or lemon curd as tasty toppings, or use Izy's homemade salted treacle butter.
