Amy Smith's health issue speech deals with the cause of 2 million deaths of children under five years of age - breathing smoke from indoor cooking fires. Smith addresses this issue as one of the biggest health issues on the planet, which leads to acute respiratory infections caused by inhaling poisonous gases.
Smith questions the audience and asks whether something can be done, such as, introducing a cleaner way of burning cooking fuels or even better stoves. She takes the example of Haiti and tells the audience that it is currently 98% deforested, leading to increases in flooding. Smith tells the audience that there is nothing the people can do, they cook, harvest wood to make charcoal.
Smith introduces a new method by finding something that is readily available on the local level and found bagasse, a fibrous biproduct after sugarcane is crushed, to be useful. Using bagasse, which has no nutritional use, Smith developed a process to transform this farm waste into something similar to charcoal.
