As part of a strategic initiative to reduce CO2 emissions, SelektMeat created seaweed-enriched beef carpaccio. Beyond helping to reduce the product's environmental impact, the seaweed serves as a flavor enhancer, and reduces the need for seasoning with salt.

Even though SelektMeat's beef carpaccio enriched with 25% added seaweed was developed in response to European legislation—originally set to take effect in 2024 and require all beef processors to reduce CO2 emissions, but later postponed—it remains a viable and forward-thinking solution.

Other hybrid meat products created to reduce environmental impact while still delivering familiar taste and texture with a blend of animal protein with plant-based ingredients have already proven successful. While many take the form of casual fare like burgers and sausages, this carpaccio offers an elevated take on the concept.
