Pasta Enzyme Systems

MC Mühlenchemie Has Created a Functional Enzyme System For Pasta Makers

MC Mühlenchemie has created a functional enzyme system for pasta makers working on protein-enriched recipes. The platform helps maintain texture, sensory quality, and cooking stability as protein levels rise.

The package combines Pastazym HighProtein enzyme systems, the MC Protein Calculator, and the company’s Pasta Lab pilot facility in Ahrensburg, Germany. It targets protein levels from 18% to 30%, with support for dough behavior, extrusion, and breakage issues that can show up as protein increases.

That mix of lab support and formulation tools fits a category where familiar staples are being tuned for more functional nutrition. It also shows how pasta development is moving toward tighter control over flavor, color, and bite, especially when wheat germ, legumes, or other proteins can change the finished result.

Protein-enhanced Staples
Everyday foods are being reformulated with higher protein content while preserving familiar taste and texture, creating space for ingredient systems that make functional nutrition feel mainstream.
Enzyme-driven Formulation
Targeted enzyme platforms are improving processing stability and sensory quality in fortified foods, opening new possibilities for cleaner product development with fewer compromises.
Pilot-lab Product Optimization
Integrated lab testing and digital formulation tools are giving manufacturers more precise control over complex recipes, reducing uncertainty in scaling next-generation food products.

Where This Applies
