Celebrate National Pina Colada Day in style with these tropical pineapple popsicles. While you could opt for a traditional blended pina colada, these ice pops are a fun way to enjoy the classic cocktail.
To make these fruity ice pops, you will need pineapple, light coconut milk, coconut rum, caster sugar and shredded coconut. Begin by combining the pineapple pieces and their juices to a mixture of rum, coconut milk and caster sugar. Add this liquid mixture to a blender and pulse until smooth. Divide the mixture into several ice pop molds and freeze overnight. Once your popsicles are fully frozen, dip the top of each one in coconut milk and sprinkle them with shredded coconut.
