Zahav Hummus Schug is Topped with a Fiery, Herbaceous Condiment

— April 22, 2026 — Lifestyle
Zahav Foods, co-founded in 2024 by five-time James Beard Award-winning restaurateurs Chef Michael Solomonov and Steven Cook of the Michelin Recommended Zahav Restaurant, launched Hummus Schug as its first flavored hummus.

Featuring the Zahav Restaurant-Recipe Hummus base (just six natural ingredients and no added oils—about four times the amount of premium roasted tehina as other brands, as well as chickpeas, lemon juice, salt, cumin, and garlic) this hummus is topped with a fiery, herbaceous condiment made from fresh green chiles and is loaded with flavor from serrano peppers, parsley, cilantro, coriander, cardamom, and olive oil. "There's a freshness to schug that you don't find in other spicy condiments," said Cook. "It's one of my favorite flavors in the world—if you can take a little heat, it belongs on just about anything."

  2. Premium Ingredient Transparency — Consumers are increasingly valuing short ingredient lists and visibly higher ratios of premium components, shifting perceptions of quality and price boundaries.
  3. Global Condiment Fusion — Cross-cultural condiment combinations like schug-topped hummus are expanding flavor expectations and blending regional pantry staples into mainstream products.

Industry Implications

  1. Food Manufacturing — Smaller-batch, chef-formulated lines are enabling manufacturers to reconfigure supply chains and production methods to prioritize ingredient provenance and texture fidelity.
  2. Retail Grocery — Shelf space dynamics are evolving as retailers curate artisanal and chef-branded items that attract premium shoppers and redefine private-label competition.
  3. Foodservice and Catering — Menu curation is being influenced by portable restaurant flavors, encouraging event and catering offerings to incorporate signature, branded condiments and spreads.
