This Fast Food Fare is Revamped with Sweet Potato Chips and Quiona

These sweet potato chip nachos offer a healthier version of the traditional Mexican food fare with the addition of the superfood quinoa, black beans and fresh veggies to transform this dish into a wholesome meal that can be enjoyed on a frequent basis. The omitting of carbs and addition of protein renders these nachos similar in flavor, but much healthier for the body.

This recipe by Simply Quinoa creatively revamps the conventional cheesy nachos by pulling out the most unhealthy parts of the dish and replacing them with full-flavor and healthy substitutes. Rather than corn chips, the dish features thinly sliced baked potato chips. Instead of meat, the nachos are topped with baked beans and cooked quinoa for protein and Mexican flavor. Lastly the dish omits cheese and replaces it with fresh guacamole.

While these nachos are vegetarian, they can easily be made more hearty with the addition of chicken, pork or beef.
