While sweet potatoes are often enjoyed in savory meals, they make for great additions to sweet ones such as these potato pancakes by Love & Olive Oil thanks to the spud's simple flavor. This hot cake recipe incorporates the orange potato into the batter and finishes it off with a cinnamon cream syrup making this an ideal breakfast for autumn.

The pancake batter is made using flour, sweet potato puree, eggs, buttermilk and popular fall spices such as cloves, cinnamon, ginger and nutmeg to give the batter a sweet, aromatic taste. The sweet potato also turns the batter a rustic orange hue adding a bit of color to these breakfast cakes. To bring out the spiced flavor, the pancakes are topped with a creamy homemade syrup containing vanilla, cinnamon, maple and condensed milk.
