Cannolis are a classic Italian dessert that features a deep fried pastry cylinder filled with a decadent ricotta cream and chocolate chips, however this savory version by lifestyle blog Thrillist subs the pastry cone for one made from deep fried bacon.

These bacon cannolis are made in two parts, the first being the cream filling that is made using whipped ricotta, vanilla, lemon and sugar to turn the cheese into a sweet whipped cream. To create the bacon casing, fresh bacon is wrapped around a cannoli tube and baked in the oven. The overlapping edges will ensure the cream doesn't seep through when pipping. The contrast between the crunchy bacon and the sweet cream will create a sweetly savory dish without diverging too much from the texture of the original.
