Joy the Baker's 'Fried Guacamole' recipe solidifies the classic Mexican sauce. While it is typically served as a side dish, often used to top tacos and burritos, Joy has instead made it the primary focus of her culinary musings.
This post gives guacamole a hardened exterior. The savory snack was unexpectedly coated in wanton wrappers, making them appear to be little candies despite their vegetable base.
To produce these Fried Guacamole bites, Joy used avocados, lime, eggs, slices of scallion and diced bits of jalapeno. Heated oil drizzled on to a saute pan allowed the thin strips to take on their brown colouring and firm texture. 45 second turns on each side was all that was needed, followed by a brief cool down period on paper towel sheets.
