These eco dining innovations range from sustainable restaurant concepts to vegan ice cream schools that aim to reduce food waste. When it comes to up-and-coming eateries, standouts include local food waste cafes that make use of produce that would otherwise be discarded or that is close to reaching its expiry date.

Other standouts include CLIF Bar & Company's Twin Falls Green Bakery -- a manufacturing and retail hybrid that prides itself on its eco-friendly practices -- along with New Zealand's Blue River Dairy cafe, an establishment specializing in locally sourced sheep milk products that are both healthy and accessible for residents.

Additional eco dining innovations include low-cost boutique grocers, food research complexes and chef-curated gardens that embrace a farm-to-table approach to daily meals.
