The solution will then go to work comparing it against various measurements of the perfect cut to grade it according to color and sheen.
The 'Tuna Scope' app was used as part of a trial run at a Tokyo restaurant during a five-day test that saw 1,000 pieces of sushi served with a satisfaction rate of 90%.
