Civil Pours celebrates a major milestone

— June 1, 2026 — Eco
The Toronto-based sustainable cocktail distillery Civil Pours has reached the milestone of serving one million expertly crafted cocktails since its 2022 launch. In order to celebrate, the business is reintroducing its Jalapeño Margarita to over 175 LCBO locations for the spring and summer season, as well as launching two new bottled offerings — a Daiquiri and a Gimlet — in June 2026.

To make its delicious drink creations, the popular sustainable cocktail distillery relies on proprietary vacuum-distillation techniques that preserve real flavors from ingredients that might otherwise go to waste. The Jalapeño Margarita combines lime and orange distillates with 100% agave spirit and real jalapeño distillate. The Daiguiry, on the other hand, uses nuanced white rum with real distilled lime and simple syrup, while the Gimlet pairs botanical gin with distilled lime and simple syrup.

Trend Themes

  1. Waste-to-flavor Distillation — A movement toward upcycling spent produce into concentrated distillates creates premium flavor provenance and new value streams for ingredient-sourcing.
  2. Shelf-stable Sustainable Cocktails — Growing consumer acceptance of bottled, ready-to-serve cocktails establishes a scalable retail category that emphasizes low-waste production and traceable sourcing.
  3. Vacuum-distillation Flavor Preservation — Advanced vacuum-distillation techniques that retain volatile aromatics enable concentrated flavor extracts and sterile, long-life formulations without additives.

Industry Implications

  1. Alcohol Beverage Retail — An expanding assortment of sustainably produced bottled cocktails as a distinct shelf category with premium labeling and seasonal rotations.
  2. Food Waste Management — Integration of beverage-grade upcycling processes into waste streams results in higher-value outputs and partnerships between farms, processors, and distillers.
  3. Sustainable Hospitality — Hospitality outlets emphasizing low-waste bars and on-premise micro-distillation as differentiators for eco-conscious guest experiences.
