The always-innovative blogger Stefani from the mind-blowing blog Cupcake Project has done it again with these temptingly savory Butternut Squash Mac and Cheese Cupcakes. Now, thanks to the ingenious Stefani, you really can have cupcakes for breakfast, lunch and dinner.
Providing a healthy boost to the usually heavy Mac and Cheese, Stefani swapped out the heavy cream in favor of adding in some pureed butternut squash to give the dish that tell-tale velvety texture. Once the classic Mac and Cheese is crafted, it is fitted into jumbo silicon cupcake sleeves and given a healthy sprinkling of panko breadcrumbs and a medley of Parmesan, Romano, and Asiago cheeses. The cake-shaped Mac and Cheese servings are then shipped off to a hot oven where, in 20 minutes time, your efforts are rewarded with a gooey compact cupcake-shaped helping of Butternut Squash Mac and Cheese.
