Round Hill Hotel & Villas is hosting a limited culinary residency with chef Alex Dilling from Nov. 25-28, bringing his modern French gastronomy to the Jamaican resort. Dilling’s restaurant at Hotel Café Royal earned two Michelin stars within six months of opening in 2023 and appeared on the 2024 50 Best Discovery list.

The program begins Nov. 25 with a Welcome Toast featuring cocktails and hors d’oeuvres. A live cooking demonstration follows on Nov. 26, offering guests insight into Dilling’s techniques. The residency concludes Nov. 28 with a limited-seating, five-course Grand Finale Dinner. Reservations are required for the demonstration and tasting menu.
