Joy the Baker's 'Vegan Carrot Cherry Breakfast Cookies' are a healthy early risers dream. While they may indeed be a cookie, a treat that is for the most part comprised of heavy ingredients like butter, eggs, chocolate or peanut butter, they have been entirely avoided here in the interest of well balanced cuisine.
These orange-hued cookies are made of a nutritious mixture. The mixture of whole wheat flour, oats, millet, carrots, dried cherries, coconut oil and ginger bring about the essential breakfast cookie, and a filling one at that.
