Although many of you might cringe just by looking at the cover of the cookbook titled ‘Odd Bits: How to Cook the Rest of the Animal,’ it cannot be denied that it is encourages an ethically responsible approach to cooking. Those who live in Western societies have grown up eating only certain cuts of meat (hot dogs excluded), yet this cookbook educates us about what the entire body of an animal can offer in terms of food.
Put together by Australian chef Jennifer McLagen, ‘Odd Bits’ is strangely enough not being touted as a eco-conscious way of cooking. Instead, it is just highlighting a way many North Americans used to eat in an inventive, informative and humorous manner. By approaching it this way, ‘Odd Bits’ shows how natural it is to eat all parts of an animal.
