Parents Discouraged from Buying Live Easter Bunnies

Animal rights activists are discouraging parents from buying children live rabbits for Easter. Pet store owners fear that when the novelty wears off, nearly half of the rabbits sold at Easter time are abandoned when the new owners lose interest in them.

The House Rabbit Society (HRS) claims that rabbits don't make very good house pets and provides information on how to care for them on its website: http://www.rabbit.org/

If you have already purchased a bunny, don't abandon it later, use my recipe for rabbit stew:

1 dissed Easter bunny, skinned and quartered
3 onions, chopped
1 bay leaf
½ cup chopped celery
2 tsp. salt
2 cups carrots, diced
3 cut up white potatoes
3 tbs. flour

Clean the rabbit and soak it in salt water. Drain, cut up, and place pieces in a large Dutch oven with onions, bay leaf, salt and celery. Cover with fresh water and cook slowly until tender (two hours). Add the diced carrots and potatoes and continue cooking until vegetables are tender. Stir corn starch or flour into cold water and slowly add to the stew until thickened, serve.
