Elmhurst's 'Elmhurst Aquafaba' is an Egg Replacer Made of Bean Brine

While there are many egg replacers on the market that take the form of powdered products, Elmhurst is set to release an innovative new alternative made with aquafaba, or the water in which legumes have been cooked.

The tentatively named "Elmhurst Aquafaba" is assembled from just two ingredients—chickpeas and water—and may be used as a replacement for egg whites in both sweet and savory applications. Aquafaba is an emerging as a useful egg replacer, especially for consumers who are embracing wholly or more plant-powered diets.

At this year's Natural Products Expo East, the former dairy brand launched a range of new products like unsweetened versions of its previously released nut-based beverages, as well as Milked Oats, Milked Brown Rice and Milked Peanuts. The tentatively named Elmhurst Milked Aquafaba is set to debut in 2018.
