These Vegetable Cupcakes Prove That Dessert Can be Nutritious and Delicious

The always creative blogger Stefani from the clever blog Cupcake Project took Jamie Oliver's Food Revolution to heart and crafted these healthy and fetching Vegetable Cupcakes. These bizarre, yet strangely appealing kale-coated cakes are worth a curious nibble. These gorgeously green confections are comprised of Honey Cupcakes (made using yogurt) topped with a delicate Honey Yogurt Frosting. These pint-sized cakes take a strange turn when they are rolled in crushed kale chips and garnished with an intact one.

Stefani admits in her blog post that the kale chip idea was initially a joke, but found upon further investigation that this healthy topping was actually quite tasty. She does advise, if you decide to go the kale route, that you should serve the Vegetable Cupcakes within an hour of garnishing as the kale does tend to go soggy if it is left for too long.
