These Lemon Meringue Desserts are Simple

If you are looking for a new dessert to try out at home these meringue cupcakes are easy to make in your microwave. Making scrumptious desserts to serve to your friends has never been as easy as popping a few ingredients in a cup and warming them in the microwave. This entire dessert only takes about 15 minutes and it yields moist and delicious lemon meringue cupcakes.


For the lemon curd:

In a microwave-safe bowl, whisk together sugar and eggs. Add lemon juice, lemon zest and butter. Whisk until well combined. Cook in microwave in one-minute intervals, stirring to combine well after each minute. Cook for six to eight minutes, or until thick.
Immediately cover bowl with plastic wrap to prevent a film from forming. Cool for one hour. Transfer to an airtight container, and refrigerate for four hours or until firm.

To make your own microwave meringue cupcakes use an electric mixer to mix lemon cake mix, plain yogurt and vegetable oil together. Pour the mixture into a cup and put in the microwave for 15 minutes. While it is cooking prepare the icing by mixing lemon juice, sugar, melted butter and lemon zest.
