Chef John Park describes that he has "always wanted to incorporate funnel cake into dessert" and experimented with this festival food favorite as a garnish or an edible tic-tac-toe board in his dishes in the past. Park has finally found satisfaction in the creation of what he calls the 'Funnelle Cake Ice Cream Sandwich.' This mashup snack is made with two deep-fried funnel cake patties that sandwich a scoop of vanilla-mascarpone ice cream and strawberry jam. The combination of a hot funnel cake with a cold scoop of ice cream may not sound comparable in terms of logistics, but all the components hold together miraculously well.
