These new DSM-Firmenich Dairy Safe cultures have been launched by the company as a series of next-generation solutions that will help to empower cheesemakers.
The cultures come in four varieties that are formulated with semi-hard, hard and continental-style cheeses in mind, and will support clean label and natural ingredient recipes. The cultures will enhance spoilage prevention, while also supporting the production of a wider range of cheese varieties. The cultures are also suitable for use with a variety of milk types including cow, goat and sheep to maximize versatility.
