Willibald Farm Distillery Uses Few Botanicals in Its Barrel-Aged Gin

Willibald Farm Distilleries opened its doors on March 15th and delighted craft spirit lovers with its first release: a barrel-aged gin with only six botanicals.

Typically, gin will have a blend of between 20 and 30 botanicals to define its flavor profile. With only six, Willibald's barrel-aged gin is more approachable and one is able to easily identify each of the botanicals present: cardamon, caraway, coriander, grapefruit peel and angelica fruit.

Its gin is made with 100% Ontario grains and is aged in American Oak quarter casks. Willibald offers patrons complimentary tours of the farm or $65 cocktail courses and guided tastings. With a whiskey on the way, this is surely a brand to have an eye on.
