Scientists at the Catalonia Institute of Food and Agriculture Research in Spain conducted the study. Anna Jofre is a food microbiologist and said that, "Probiotic fermented sausages will give an opportunity to consumers who don't take dairy products the possibility to include probiotic foods to their diet."
