This Japanese Strawberry Tart is Made With White Strawberries

In honor of the recent creation of white strawberries in Japan, a pastry shop by the name of Qu'il Fait Bon put together a decadent tart dessert containing the fruit that replicates the essence of love through flavor and smell. The use of the unusual yet familiar white fleshed fruit gives the tart an unconventional aesthetic.

White strawberries have been a work in progress for over 20 years, created with the use of anthocyanin. The chemical is the ingredient that gives the fruit its bright red flesh, so the white strawberries only have a drop of the liquid inside rending them a pale pink and almost white in color. The strawberries are known as "Hatsukoi no Kaori" which means "the scent of first love" and speaks to the fruit's use in capturing the romantic concept through flavor.
