White Lyan is a completely unique cocktail bar that just opened its doors in September on Hoxton Street in London. What makes it very unusual is that it forgoes all perishable cocktail ingredients, including citrus, liqueurs and even ice. Instead of the traditional lemon or lime, the White Lyan gets creative with other souring agents. Iceless drinks that are meant to be served chilled are simply refrigerated and as Ryan Chetiyawardana, one of the White Lyan’s co-founders notes:" It's amazing to see how different the mouth-feel and length is in a drink when you're not 'tasting' ice."

The duo makes their own spirits and hardly any spirit brands are in sight at the bar.
