Audemus Spirits Launches Savory New Spirit in the UK, Umami Gin

European spirit maker Audemus Spirits has launched Umami Gin in the UK following its success in the Australian and French markets. Interestingly, the new expression differs greatly from traditional gins; it is made by infusing ingredients that create a savory (umami) flavor, rather than those that deliver the refreshing, herbaceous taste gin drinkers might be used to.

In particular, Umami Gin derives its savory flavor from a combination of Sicilian capers, which are distilled under a vacuum at 45 degrees, and Parmigiano-Reggiano, a glutamate-rich ingredient that activates the tongue's ability to taste umami. In addition, the spirit is further infused with juniper distillates and bergamot before being aged in cognac barrels for several months.
