Air Canada has partnered with Michelin-starred Chef Masaki Hashimoto to enhance its Signature Class dining experience on flights to and from Japan.

Chef Masaki Hashimoto is renowned for his mastery of Kaiseki cuisine — a traditional Japanese multi-course dining style — and he brings his culinary expertise to the airline, offering passengers a rotating menu of meticulously crafted dishes. The menu includes appetizers like sautéed lotus root, side dishes such as sesame tofu with wasabi sauce, and main courses featuring beef sukiyaki with simmered tofu and vegetables, all served with calrose rice and miso soup. The experience is further elevated with premium sake pairings selected by Chef Masaki Hashimoto’s son, Kei Hashimoto, who is a certified sake sommelier.
