Ollin's Cake Mixes Feature a University-Developed Hard Red Wheat Variety

Ollin specializes in heritage grain cake mixes created to "deliver authentic flavor and perfect texture without the baggage that comes from factory wheat." These cake mixes feature TAM 105, a hard red wheat variety developed by Texas A&M University in 1976, as well as heritage grains, including spelt and rye.

"The problem isn’t wheat itself—it’s what modern processing has done to it," said Ollin founder Alyssa Fernandez. Ollin created these cake mixes to address roller-milling, bleaching, synthetic enrichment and artificial preservatives in traditional flour processing, and now, it's bringing European stone-milling traditions and real wheat to a new generation.

These direct-to-consumer heritage grain cake mixes emphasizing "gluten done right" are launching in two varieties: Golden Hour Yellow and Anyday Chocolate.
