Piccolina's Greyscale Gelato Challenged Flavor Perception

Color can significantly influence flavor perception and Piccolina's limited-run Greyscale Gelato put this to the test. This edible art activation by Brazilian artist João Loureiro at MPavilion introduced six gelato flavors, all in different shades of gray, none of which were labeled. Curious eaters had to order by shade alone, with options including light gray and near black.

Although the flavor experience may have served up some surprises, guests got to savor Piccolina scoops made with time-tested Italian techniques and fresh ingredients. This unique sensory experience with food had people second-guessing the gelato flavors they tasted because of what they saw, and are used to seeing since gray is seldom incorporated into vibrantly colored frozen desserts for spring and summer.
