Ava Winery's Designer Wines are Made Without Grapes

Ava Winery has crafted wines that don't contain any grapes, yeast or fermentation. The grapeless wines were created by bioengineers in a lab in San Francisco. The engineers analyzed the molecular profiles of select wines and then crafted a reconstructed the molecules into a bioidentical match.

The engineers are focused on replicating a Moscato d'Asti, a Dom Perignon and a Pinot Noir. The aim is to be able to clone the high-end wines. If successful in their ability to claim various wines, Alec Lee, the founder of Ava Winery, is still unsure about the labeling process of the wines given that they wouldn't have the standard ingredients of a wine. Lee is interested in pursuing synthetic luxury goods like chocolate and coffee, but wants to focus on crafting the bioegineered grapeless wines for now.
