New Givaudan Flavors Include Picanha, Matambre and Chorizo Beef

Thanks to Givaudan flavors like picanha, matambre and chorizo, you could be experiencing a lot more Latin American-tasting foods. These South American beef-inspired flavors are just some of the recently developed recipes from Givaudan South America as it attempts to differentiate among competitors. Researchers went as far as Brazil and Argentina to study local beef recipes for two years. The company also purchases 10,000 different ingredients a year, including Madagascar vanilla beans, citrus, coffee, gums, tree bark and other herbs, despite rising costs for raw materials.

The past 10 to 15 years have seen increased outsourcing of flavor and ingredients in the beverage and food industry. This allows Givaudan flavors to control a quarter of the fragrance and flavors market share.
