Duck & Waffle's 'Drink Your Greens' Menu Celebrates Vegetarian Week

In celebration of National Vegetarian Week, Duck & Waffle in London launched a unique cocktail menu called 'Drink Your Greens.' As its name might suggest, the drinks were heavily inspired by vegetables.

Some standout menu items included the Artichoke Negroni, the Red Pepper Spritz and the Avocado Aperitivo, which is served neat over a frozen avocado stone. Duck & Waffle also put a unique spin on the classic bourbon- and vermouth-based Manhattan with red onions and roasting bitters to create the Caramelised Red Onion Manhattan.

According to Rich Woods, the head of cocktail and spirit development, "the mighty vegetable is long overlooked as a more than suitable replacement to fruit in many a classic cocktail."
