Coi's Daniel Patterson Instituted a Flat Fee Dining System

In an effort to reduce the amount of people cancelling reservations, Coi chef and owner Daniel Patterson introduced non-refundable tickets to his restaurant. Based out of San Francisco, Coi is a two Michelin Star-boasting dining experience for which patrons pay a flat fee for an advance reservation.

Depending on the time and date, tickets can range from $145 to $195. This includes a 12 course tasting menu for every diner. While would-be guests cannot get their money back if they wish to cancel, they can transfer the tickets to someone else's name if they can find friends to go instead. Daniel Patterson hopes this system will ensure the venue gets paid regardless, while customers aren't surprised by large bills.
