Bimber Partners with Fortnum & Mason to Launch New Single Malt

London-based Bimber Distillery has teamed up with department store Fortnum & Mason to launch London Single Malt Whiskey, a new single malt finished in a fino Sherry butt.

The new expression is the distillery's first-ever fino Sherry cask-matured single malt and will be available starting February 11 at Fortnum & Mason’s Piccadilly store. According to the company, the whiskey was produced using its signature farm barely and was fermented for seven days in American oak washbacks before being matured for four years in ex-Bourbon casks. Of course, the liquid was then aged in a fino Sherry butt supplied by winemaker Bodegas Tradición.

As a result, the sophisticated whiskey conjures notes of ginger, nutmeg, griddled pineapple, oven-baked pear tarts, poached apricots, and more.
