The Smart Gastronomy Lab uses a series of 3D printers to try and give healthy foods a more appetizing form. The goal is to create palatable food items with enhanced nutritional profiles. One such project involves producing a 3D-printed chocolate that is infused with protein-rich algae. As lab director Dorothée Goffin explains, "3-D printing will allow us to reconstitute food, and in doing so restore the pleasure of eating."
